Thick slices of fennel are air-fried until golden and tender, bringing out their natural sweetness and delicate aniseed notes. Topped with a creamy, zesty dressing made from Greek yoghurt, tahini, lemon, fresh dill, and red onion, the dish is refreshing yet indulgent. Finished with a sprinkle of thyme and a drizzle of olive oil, it’s the perfect vegetarian main or side that’s both nourishing and delicious.

Fennel Steak

Ingredients

  • 1 fennel bulb
  • 2 tbs olive oil
  • 1 tbsp picked fresh thyme
  • ¼ cup picked fresh dill
  • 1 onion red finely diced
  • 1 lemon juiced & zested
  • ½ cup tahini
  • 1 cup Greek-style yoghurt
  • Salt & pepper to taste

Method:

  • Cut the fennel into 3-4 length slices.
  • Drizzle with olive oil. Sprinkle with salt and pepper.
  • Place in the air fryer for 10-15 or until golden.
  • Add sliced red onion, dill, lemon juice, tahini, oregano, and olive oil to a bowl and mix well.
  • Remove the fennel and place on a plate. Dress with the salad dressing.
