Ingredients
- 2 packets of Tomberry tomatoes
- 1 clove of garlic
- 3 anchovy fillets
- 1 brown onion
- ½ banana chilli optional
- 1 cup Parsley picked
- 2 cups penne pasta
- 1 tsp pepper
- 1tsp salt
- 1 lemon juiced & zested
- 3 tbsp olive oil
- 100 g parmesan cheese
- Salt & pepper to taste
Method:
- Add pasta to salted boiling water, cook for 10-12 minutes or as per the pack instructions
- Add oil, chilli and garlic to a hot pan. Cut up anchovy filets into small pieces, add to pan.
- Add zested lemon. Add lemon juice, salt and pepper.
- Cook for 7-9 minutes on a medium heat until onions are soft.
- Drain the pasta and add it to the pan with the tomatoes, toss it through.
- Plate and finish with parmesan cheese and parsley.
