Sweet, caramelised butternut squash is roasted to perfection and served atop a creamy cauliflower and feta purée that’s zesty, tangy, and beautifully smooth. A drizzle of lemon and a sprinkle of fresh oregano add a bright herbal lift, balancing the richness of the roast. Whether it’s a comforting side or a meat-free main, this dish is nourishing, elegant, and packed with satisfying flavour.

Ingredients
- ¼ butternut squash, cut long ways
- ½ cauliflower
- 1 block of feta
- Handful of fresh oregano (chopped)
- ½ lemon (juice)
- Olive oil
- Salt and pepper
Method:
- Remove skin and seeds from pumpkin and score pumpkin with slices halfway through.
- Drizzle pumpkin with oil and roast in oven at 180C for approx. 20min.
- While pumpkin is roasting, cut half a cauliflower into smaller pieces and boil in hot water until cooked.
- Add cooked cauliflower, feta, lemon juice, and a splash of olive oil into a blender and blend until smooth.
- Plate the roasted pumpkin on a bed of cauliflower puree, season with salt and pepper before serving.
