Emmas Margherita Pizza

Ingredients

  • 1 red capsicum
  • 1 cup grated carrot
  • 1 large tomato
  • 1 pizza base
  • Slices of mozzarella cheese
  • Olive oil to drizzle

Method:

  • Remove the seeds and stalk of the capsicum before cutting it into large pieces and place in a blender. Add chopped tomato and grated carrot, then blend until smooth.
  • Spread sauce over the pizza base, top with slices of mozzarella and drizzle with olive oil.
  • Bake in a preheated oven at 180°C until cheese has melted and golden.
  • Cut into slices before serving.
