Tender smashed Lebanese cucumbers mingle with crisp radishes, spring onions, and sweet apple, all tossed in a silky, zingy dressing made from grated carrot, spicy ginger, umami-rich miso, and zesty lemon. A hint of sesame and olive oil rounds out the flavour profile, adding depth and nuttiness. Light yet satisfying, this salad is perfect as a crisp side or a vibrant snack that brings a burst of colour and nutrition to your table.

Cucumber Smash

Ingredients

  • 3 Lebanese cucumbers
  • 4 spring onion springs
  • 4 radishes
  • 3 carrots, grated
  • 1 apple
  • 1 piece of peeled ginger (thumb length)
  • 1 tbsp miso (dark recommended)
  • ½ lemon (juiced)
  • 1 tbsp sesame oil
  • Olive oil

Method:

  • Cut cucumbers into long quarters and smash to soften and break up.
  • Finely slice radish and chop spring onions, adding to a bowl with cucumbers.
  • Chop apple and add to a blender with grated carrot, ginger, miso, lemon juice, sesame oil and drizzle of olive oil. Blend until smooth, adding water to desired consistency.
  • Add dressing to salad and toss to combine before serving.
