Creamy, bold, and packed with layered flavour, this Cauliflower Hummus is a vibrant twist on a classic dip. Steamed cauliflower forms the silky base, blended with zesty lemon, garlic, and olive oil for a rich, smooth texture without the need for tahini. A topping of pan-fried cauliflower, garlic, and chilli adds a punch of heat and crunch, while roasted capsicum and fresh horseradish bring smoky-sweet depth and a sharp, peppery finish. Perfect as a dip, spread, or veggie-packed starter, this dish is as nourishing as it is delicious—a modern, low-carb take on a Mediterranean favourite.
