Broc Steak With Olive Butter Bean

Ingredients

  • 1 whole head of broccoli
  • 2 tbsp cumin
  • 2 tbsp paprika
  • Salt and pepper to taste
  • ½ an avocado
  • 1 tin of butter beans drained and rinsed
  • 200 g green olives pitted
  • 1 tbsp miso paste
  • Extra Virgin Olive oil

Method:

  • Blanch the whole head of broccoli by steeping it in boiling water to soften it slightly.
  • Once blanched, drizzle the broccoli with olive oil and season generously with cumin, paprika, salt, and pepper.
  • Place the seasoned broccoli in an air fryer or oven and roast until golden and slightly charred, bringing out its natural sweetness and deepening the flavour.
  • While the broccoli roasts, prepare the purée. In a blender, combine the butter beans, miso paste, avocado, and olives. Add a drizzle of olive oil and blend until smooth and creamy, adjusting the seasoning to taste.
  • To serve, spread a generous amount of the butter bean purée onto a plate. Place the roasted broccoli steak on top, allowing the smoky, spiced flavours to contrast beautifully with the creamy, umami-rich purée.
